Gluten-Free Oats

The number one ingredient in our cookies is gluten free oats and oat flour, which have tons of health benefits. Rich in soluble fiber, studies have consistently shown that oats can help reduce cholesterol, reduce the risk of developing high blood pressure, and are rich in antioxidants. Even better, those who can't eat gluten, can enjoy hearty gluten free oats.

Oats also make the cookies more dense, which means you can feel satisfied after one or two (unlike other cookies where you can easily eat a whole sleeve in one sitting!).

Organic Coconut Sugar

Sugar should always be eaten in moderation. However, coconut sugar is a good alternative to processed white sugar.

Coconut sugar is made by extracting the sap of a coconut palm tree, boiling, and then dehydrating it.

Organic Coconut Nectar

Coconut nectar is the sap that comes from the coconut palm tree. It’s the stuff that coconut sugar is made from.

Think of it like maple syrup, except from a coconut palm tree instead of a maple tree.

Dates

Dates are nature’s candy and a fabulous way to sweeten our cookies naturally.

They are full of antioxidants (in particular flavonoids, carotenoids, and phenolic acid) and they’re great for digestion.

They have a low glycemic index like coconut sugar, so you won’t bounce off the walls after eating them!

Excellent source of fiber, iron, potassium, calcium, manganese, copper, and magnesium.

White Rice Flour

We like to keep on top of the latest research, so when we heard that there were concerns about brown rice containing arsenic, we switched to white rice flour. This change also makes for a smoother taste, which enhances your cookie-eating experience!

Good source of magnesium, phosphorus, manganese, selenium, iron, folic acid, thiamine and niacin

Palm Fruit Oil

The use of palm oil is a hot button issue.

Sunflower Lecithin

Sunflower lecithin is rich in choline and other essential fatty acids such as phosphatidyl choline, a powerful brain food. Some people even take it as a supplement. Sunflower lecithin is made by dehydrating a sunflower and separating it into three parts: oil, gum, and solids. The lecithin comes from the gum. It is processed through a cold press system like the one used to make olive oil.

Compare that to soy lecithin, which is an empty additive and common allergen, likely contains GMOs, and is processed with chemicals.

Organic Gum Acacia

Gum Acacia, also known as Arabic gum, Indian gum, or just plain Acacia, is a natural gum sourced from the hardened sap of the Acacia Senegal tree, a thorny shrub-like tree native to regions Africa, India, and Pakistan. We use it to keep our cookies together, but some people take it as supplement to soothe sore throats, manage weight, or as a source of fiber.
