Vegan Apple Pear Crisp

Dive into Fall with this vegan apple pear crisp recipe by I Am Simply Sherri using Maxine's Heavenly Cinnamon Oatmeal Raisin cookies.



  • 1 bag of Maxine’s Heavenly Cinnamon Oatmeal Raisin Cookies
  • 3 Pears
  •  3 Apples
  • ⅓ cup walnuts chopped
  • 1 TBS lemon juice
  • ¼ cup maple syrup
  • 2 tsp cinnamon
  • ½ tsp ginger
  • 1 tsp nutmeg
  • 1 tsp cardamom
  • 1 TBS cornstarch
  • 2 TBS vegan butter
  • 1 TBS melted coconut oil



  1. Preheat Oven to 350F
  2. Peal, core and chop 3 pears & 3 apples and place in large bowl
  3. Add lemon juice, cardamom, ginger, maple syrup, nutmeg, cinnamon and cornstarch
  4. stir to combine
  5.  In a separate bowl, crumble 1 bag of the Maxine’s Heavenly Cinnamon Oatmeal
  6. Raisin cookies
  7. Melt 2 TBS of vegan butter and combine with cookies
  8. Coat cast iron skillet with 1 TBS of melted coconut oil
  9. Place fruit mixture into the cast iron, sprinkle with the chopped walnuts and cover
  10. with cookie topping
  11. Place cast iron into oven for 30 minutes until topping begins to brown
